Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main meaty flavor and body as it simmers into the broth.
Egg white
Clarifies the broth as it coagulates, trapping fine particles so the soup turns clear.
Stock
Forms the liquid base that carries the flavor of the beef and vegetables.
Butter
Adds fat and a rounded richness to the finished broth.

The step that matters

Skimming after the boil. Removing foam and fat keeps the consommé clear and free of greasy, cloudy particles. Simmering gently rather than boiling prevents the broth from turning murky as fat and proteins are stirred up.

Swap the clove

How well each one fits the dish's main ingredients (beef, carrot, onion, pepper, butter, chicken, egg):

  1. Parsleyfits better
  2. Thymefits better
  3. Celeryfits better
  4. Clovethe original

Fit is the average pairing score against beef, carrot, onion, pepper, butter, chicken, egg. Candidates are from the same food group and used in at least 100 recipes.
