Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. In a large bowl, combine ground veal, pulverized soda crackers, eggs, thick cream, and butter.

  2. Season the mixture with black pepper, cayenne pepper, and salt. Mix well until all ingredients are thoroughly combined.

  3. Grease a loaf pan and pour the mixture into it.

Bake

  1. Bake in a preheated oven at 350°F (175°C) for about 2 hours or until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main body and meaty texture of the loaf.
Eggs
Bind the meat and set during baking to hold the loaf together.
Soda crackers
Absorb moisture and help keep the loaf tender rather than dense.
Thick cream
Adds moisture and richness, keeping the loaf from drying out.

The step that matters

Baking until cooked through. Ground veal must reach a fully cooked interior, and eggs must set. Judging doneness by time alone can leave the centre undercooked or the loaf dry, so check that it is cooked through.
