What each ingredient does

Chestnuts
Provide the main body and starchy, mellow flavour that thickens the soup when mashed.
Stock
Forms the liquid base in which the chestnuts soften and release their starch.
Cream
Adds richness and a smooth, silky mouthfeel to the finished soup.

The step that matters

Mashing the chestnuts through a sieve. Chestnuts must be fully softened from simmering before mashing. Pressing them through a sieve breaks the starch cells and yields a smooth, lump-free texture once returned to the liquid.

Swap the chestnut
