Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Grind the veal and pickled pork together.

  3. In a bowl, combine the ground meat with beaten eggs, salt, black pepper, sage, and cayenne.

  4. Shape the mixture into a loaf and place it in a baking pan.

Bake

  1. Cover the loaf and bake for 4 hours, basting often with a mixture of butter and water.

  2. In the last 30 minutes, uncover to allow the top to brown nicely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a rich, meaty texture when cooked.
Eggs
Bind the ground meat together so the loaf holds its shape when sliced.
Pickled pork
Adds fat and salty, savory flavor that keeps the lean veal moist.
Butter
Adds fat and flavor to the basting liquid and helps the top brown.

The step that matters

Covering, then uncovering the loaf. Baking covered at a low temperature keeps the lean meat from drying out, while uncovering for the last 30 minutes lets the surface dry and brown. Uncovering too early can dry the loaf before it is cooked through.

Swap the sage

How well each one fits the dish's main ingredients (veal, egg, pork, pepper, butter):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against veal, egg, pork, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
