Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line a deep pan with rich pastry.

Make the filling

  1. Cream the butter in a bowl, then add sugar and beaten egg yolks.

  2. Stir in the brandy, wine, grated nutmeg, and cooked apples (rubbed through a sieve).

Bake and serve

  1. Make a meringue with the egg whites and spread it over the pudding.

  2. Return the pudding to the oven just long enough to brown the meringue nicely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the filling, while whites form the meringue topping.
Butter
Creamed with sugar, it adds richness and a tender texture to the filling.
Sugar
Sweetens the filling and helps cream the butter into a smooth base.
Cooked apples
Provide the main fruit body and moisture for the pudding filling.
Brandy or whisky
Adds aroma and warmth to the filling.

The step that matters

Return the pudding to the oven just long enough to brown the meringue nicely.. Meringue sets and browns quickly in heat, and overbaking can make it weep, shrink, or toughen while the filling overcooks.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, butter, sugar, brandy, wine, apple):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits about as well
  4. Gingerfits less well

Fit is the average pairing score against egg, butter, sugar, brandy, wine, apple. Candidates are from the same food group and used in at least 100 recipes.
