Strawberry Short Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the shortcake

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and sugar.

  3. Cut in butter until the mixture resembles coarse crumbs.

  4. Add milk gradually, mixing until a dough forms.

  5. Roll the dough to ½ inch thick and place in a shallow round pan.

  6. Brush the top with melted butter and add another layer of dough on top.

  7. Bake until golden brown, about 15‑20 minutes.

Prepare the strawberries

  1. Wash and cap the strawberries, reserving the largest for garnish.

  2. Mix the strawberries with ½ cup sugar and chop slightly.

Assemble and serve

  1. Separate the baked layers and spread the chopped strawberries on the bottom layer.

  2. Replace the top layer and garnish with whole strawberries.

  3. For the hard sauce, beat ¼ cup butter until creamy. Add ½ cup sugar and beat until light and fluffy. Mix in 1 tablespoon of heavy cream.

  4. Dot the sauce over the top of the cake and serve immediately.

What each ingredient does

All-purpose flour
Forms the structure of the dough as it bakes into the shortcake layers.
Unsalted butter
Cut into the flour to create tender, flaky layers as it melts in the oven.
Baking powder
Releases gas during baking so the shortcake rises and stays light.
Strawberries
Provide fruit flavor, moisture and acidity that contrast with the sweet shortcake.
Sugar
Sweetens the strawberries and the hard sauce and helps the shortcake brown.
Milk
Hydrates the flour so the mixture binds into a dough.

The step that matters

Cut in the butter until coarse crumbs form. Butter left in small, cold pieces melts during baking and creates steam pockets that give a tender, flaky texture. If the butter is overworked into the flour, the shortcake turns dense and tough.
