Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and soft, slightly chewy texture.
Eggs
Egg yolks enrich and set the custard, while beaten whites form the meringue topping.
Milk
Forms the liquid base that the tapioca swells in and the eggs enrich.
Sugar
Sweetens the pudding and helps stabilise the beaten egg whites in the meringue.

The step that matters

Adding the beaten yolks to the boiling mixture. Egg yolks can scramble if they meet very hot liquid too quickly. Stirring constantly and adding them gradually helps keep the pudding smooth and evenly thickened.
