Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and soak the rice, then place it in a pudding dish that holds a quart.

  2. Fill the dish with milk and cream, and add the salt.

Bake

  1. Bake in a 350°F (175°C) oven for about 30 minutes.

  2. Add the sugar, vanilla, and raisins to the dish.

  3. Return the dish to the oven and cook slowly for 2 hours or more.

  4. Add hot cream if the milk boils down.

Top and serve

  1. Just before serving, spread fresh marshmallows on top and return to the oven until they swell.

  2. Serve with whipped cream or plain cream, garnished with candied cherries or red jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that softens and thickens the milk into a creamy pudding as it slowly bakes.
Milk and cream
Liquid that cooks down with the rice, providing richness and a soft, custardy body.
Sugar
Adds sweetness and helps the pudding brown slightly during the long bake.
Raisins
Add chewy pockets of sweetness and fruit flavour throughout the pudding.
Marshmallows
Melt and swell on top, adding a soft, lightly browned sweet crust.

The step that matters

Long, slow baking with added hot cream. Cooking slowly for two hours or more lets the rice absorb liquid and soften gradually, giving a creamy rather than dry texture. If the milk boils down too far, the pudding thickens and dries out, so adding hot cream keeps the liquid level right.

Swap the raisin

How well each one fits the dish's main ingredients (rice, milk, cream, sugar, vanilla):

  1. Coconutfits better
  2. Strawberryfits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against rice, milk, cream, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
