Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavor and body of the soup as they simmer in the stock.
Butter
Carries fat for flavor and, with flour, forms the roux that thickens the soup.
Flour
Thickens the soup when cooked in butter to form a roux.
Thick cream
Adds richness and a smooth, creamy texture to the soup.
Chicken or veal stock
Provides the liquid base and savory flavor in which the mushrooms simmer.

The step that matters

Stir constantly until the soup reaches the boiling point. Once the flour-thickened butter mixture meets the hot liquid, it can clump or scorch on the bottom of the pan if not stirred. Constant stirring keeps the starch dispersed so the soup thickens smoothly.

Swap the white pepper

How well each one fits the dish's main ingredients (mushroom, chicken, butter, flour, cream):

  1. Garlicfits better
  2. Nutmegfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against mushroom, chicken, butter, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
