Ingredients

Directions

Prepare

  1. Chop the cold, cooked chicken and veal into even-sized pieces, not too small, and season.

  2. Wash, scrape, and chop the tender stalks of celery into small pieces.

  3. Chop the pecans.

Make and serve the salad

  1. Marinate the chicken and keep it in a cool place until ready to serve.

  2. Mix the chicken with the celery and pecans.

  3. For every quart of salad, add 1 cup of thick mayonnaise dressing and mix gently, reserving some for garnish.

  4. Serve with lettuce leaves or celery tops.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold, cooked chicken
Forms the main body of the salad and provides its meaty texture.
Thick mayonnaise dressing
Adds moisture and richness, binding the chicken, celery and pecans together.
Tender stalks of celery
Adds crisp, juicy texture that contrasts with the soft chicken.
Shelled pecans
Adds crunch and a toasty, nutty flavour.

The step that matters

Mix gently with the dressing. Folding the mayonnaise in gently keeps the chicken pieces intact and the celery crisp. Vigorous stirring breaks down the meat and celery, making the salad mushy and watery.

Swap the pecans

How well each one fits the dish's main ingredients (chicken, veal, celery, lettuce):

  1. Beansfits better
  2. Lentilsfits better
  3. Walnutfits better
  4. Pecansthe original

Fit is the average pairing score against chicken, veal, celery, lettuce. Candidates are from the same food group and used in at least 100 recipes.
