Petits Fours

Oven, in the book's wordsA very moderate oven

Ingredients

Directions

The book says “a very moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the paste, keeping it stiffer and firmer.

  2. Add 2 egg whites to the royal icing and mix until thoroughly incorporated.

  3. Fill a biscuit forcer and push the macaroons onto buttered wafer paper.

  4. Bake in a moderate oven at 350°F (175°C) to prevent the macaroons from running together.

  5. Once baked, place the petits fours in decorative paper cases.
