Beef a LA Mode

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Brown and sauté

  1. In a large pot, heat the vegetable oil over medium heat.

  2. Brown the beef roast on all sides, then remove it from the pot.

  3. Add onions, carrots, celery, and garlic to the pot; sauté until softened.

Braise and serve

  1. Return the beef to the pot, add beef broth, thyme, bay leaf, salt, and pepper.

  2. Cover and cook in the oven for 2 to 3 hours, until the meat is tender.

  3. Remove the beef, let it rest, then slice and serve with the vegetables and broth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
Provides the main meat, which becomes tender and flavorful through slow braising.
Onions
Soften and sweeten as they cook, adding savory depth to the broth.
Carrots
Add natural sweetness and body to the vegetables and braising liquid.
Celery
Adds aromatic flavor and a subtle savory background to the braise.
Beef broth
Supplies the liquid that gently cooks the meat and forms the sauce.
Garlic
Contributes pungent aroma that mellows and deepens during cooking.

The step that matters

Browning the beef on all sides. Searing creates browned surface flavors through the Maillard reaction, which build the depth of the finished braising liquid. Pale, unbrowned meat yields a flatter-tasting sauce.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion, carrot, celery, garlic, thyme, pepper):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against beef, onion, carrot, celery, garlic, thyme, pepper. Candidates are from the same food group and used in at least 100 recipes.
