Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shoulder
Slow cooking in liquid turns this tough cut tender and rich.
Vinegar
Acidity tenderises the meat during marinating and gives the braise its sour flavour.
Onions
Sweetness and savoury depth as they soften and brown in the pan.
Flour
Browns in the fat and thickens the cooking liquid into a richer sauce.
Bay leaf
Adds a subtle aromatic herbal note to the braising liquid.

The step that matters

Brown the meat well on both sides. Browning creates deep flavour through the Maillard reaction. Pale meat gives a flat, grey-tasting braise, so the surface needs real colour before liquid goes in.

Swap the onion
