Meat Pie with Potato Crust

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Chop cold roast beef, removing all fat and gristle.

  2. Cover bones and trimmings with cold water, add onion, carrot, and celery, and simmer for 1 hour.

  3. Strain the broth and simmer it with the beef until tender.

  4. Season with salt and pepper, then pour into a baking dish.

  5. Dust with a little flour and add sautéed mushrooms.

  6. Cover with a round of potato crust that has an opening.

  7. Bake at 400°F (200°C) for about 15 minutes or until the crust is done.

  8. For the potato crust, sift together flour, salt, and baking powder.

  9. Cut in shortening, then add cold mashed potato and enough milk or water to form a dough.

  10. Roll out on a floured board.
