Stuffed Squash

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the squash

  1. Cut the squash in half crosswise.

  2. Remove the seeds and strings.

  3. Place the squash halves in a baking dish, shell side up.

  4. Bake in a slow oven at 300°F (150°C) for 2 hours or until soft.

  5. Carefully scrape out the squash from the shells without breaking them.

Make the filling

  1. Heat the butter in a skillet.

  2. Add the chopped onion and brown lightly.

  3. Add the soaked bread and mashed squash to the skillet.

  4. Fry together for 15 minutes, stirring occasionally.

  5. Remove from heat.

  6. Add salt and pepper.

  7. Stir in the egg until well combined.

Stuff and bake

  1. Spoon the mixture back into the squash shells.

  2. Sprinkle with cracker crumbs and bits of butter.

  3. Return to the oven to brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Squash
Forms the bulk of the filling and gives the stuffing its moisture and mild sweetness.
Egg
Binds the mashed mixture so it holds its shape when spooned back into the shells.
Soaked bread
Adds body and absorbs moisture, keeping the filling soft rather than watery.
Butter
Adds fat for rich flavour and helps the onion brown and the top crisp.
Cracker crumbs
Form a crisp, browned topping during the final baking.

The step that matters

Return to the oven to brown. The filling is already cooked, so this step only needs to colour the top. Too long or too hot dries the stuffing and can burn the crumbs before the interior is heated through.

Swap the onion

How well each one fits the dish's main ingredients (butter, bread, egg, pepper):

  1. Capsicumfits better
