Taffy Candy

Ingredients

Directions

  1. In a saucepan, combine the sugar, butter, vinegar, and enough water to cover.

  2. Stir until the sugar is dissolved.

  3. Lift a little with a spoon and drop it into cold water. If it can be rolled into a ball, it is boiled enough.

  4. Remove from heat and add vanilla to taste.

  5. Pour into a buttered pan.

  6. When cool enough to handle, pull with your fingers until hard.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the sweet, brittle-setting body of the taffy as it cooks and hardens.
Butter
Adds fat that softens the texture and keeps the taffy from becoming too brittle.
Vinegar
Acidity helps prevent the sugar from crystallizing into a grainy texture.

The step that matters

Testing the boil with cold water. Sugar syrup must reach the right concentration before it is removed from heat. Undercooked syrup stays sticky and will not set firm, while overcooked syrup turns hard and brittle. The cold-water ball test checks this by showing how the syrup behaves as it cools.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, butter, walnut, vinegar, vanilla):

  1. Almondfits better
  2. Hazelnutfits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, butter, walnut, vinegar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
