Virginia Rice Bread

Ingredients

Directions

  1. Boil the rice in water until well cooked, which will yield about 1 pint.

  2. While the rice is warm, stir in the lard or butter and add salt to taste.

  3. In a separate bowl, beat the egg whites and yolks separately.

  4. Mix the egg yolks with the milk, then add the cooked rice.

  5. Gently fold in the beaten egg whites.

  6. Butter a baking dish and pour the batter in, filling it as full as possible.
