What each ingredient does

Fresh mutton
Provides the main meat, which becomes tender and fully cooked during long simmering in water.
Caper sauce
Adds a sharp, acidic note that contrasts with the rich, mild flavour of the boiled meat.

The step that matters

Boil the mutton until thoroughly cooked. Boiling for the full time per pound gives collagen in the meat time to break down, making it tender. Pulling it early can leave it tough and underdone in the centre, which is a food safety concern.

Swap the parsley

How well each one fits the dish's main ingredients (mutton, sauce):

  1. Capersfits better
  2. Pepperfits better
  3. Gingerfits about as well
  4. Parsleythe original

Fit is the average pairing score against mutton, sauce. Candidates are from the same food group and used in at least 100 recipes.
