What each ingredient does

Chickens
Provide the main protein, cooked slowly in liquid until tender.
Cream
Adds richness and body, thickening the sauce as it cooks.
Butter rolled in flour
Flour thickens the liquid while butter adds fat and smooth flavour.
Ham
Contributes salty, savoury flavour to the sauce.
Shallots
Add mild aromatic sweetness that builds the base flavour.

The step that matters

Stirring in the cream and floured butter. Adding cold cream and flour-coated butter to hot liquid can cause lumps. Constant stirring disperses the flour so the starch thickens evenly into a smooth sauce.

Swap the mace

How well each one fits the dish's main ingredients (chicken, ham, shallot, pepper, cream, walnut, butter):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Capersfits better
