Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Provides the meat and rich flavour that the stew is built around.
Onions
Soften during long simmering and add sweetness to the broth.
Potatoes
Thicken the broth slightly as their starch breaks down during cooking.
Egg yolk
Adds richness and body to the broth when stirred in at the end.

The step that matters

Simmer gently for 3 hours. A gentle simmer keeps the mutton tender and the broth clear. A hard boil toughens meat proteins and can break the stew up, so keep the heat low once the pot reaches a boil.
