Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble

  1. Remove oysters from their liquor and place some in a baking dish.

  2. Sprinkle seasoned bread crumbs, pepper, salt, and celery seeds over the oysters, then add bits of butter.

  3. Add another layer of oysters and repeat the seasoning.

  4. Pour white wine over the top and add another layer of grated bread crumbs.

Bake

  1. Bake at 350°F (175°C) until hot throughout.

What each ingredient does

Oysters
Provide the main ingredient and tender, briny flavor that the dish is built around.
Seasoned bread crumbs
Form a crisp, golden topping and absorb moisture from the oysters.
Butter
Adds richness and helps the top layer brown in the oven.
White wine
Adds moisture and acidity that flavors the oysters as they cook.

The step that matters

Bake until hot throughout. Oysters cook quickly and turn rubbery when overcooked, so bake only until the dish is heated through and the edges are just bubbling.

Swap the celery

How well each one fits the dish's main ingredients (oyster, bread, pepper, butter, white wine):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Celerythe original

Fit is the average pairing score against oyster, bread, pepper, butter, white wine. Candidates are from the same food group and used in at least 100 recipes.
