What each ingredient does

Cabbage
Forms the body of the dish and turns tender and sweet as it cooks slowly in steam.
Butter
Adds fat and richness, carrying flavour and giving the cabbage a smooth finish.
Vinegar
Adds acidity that brightens the mild, sweet flavour of the cooked cabbage.

The step that matters

Cook on the stove for 1 hour until tender. Cabbage must be cooked long enough for its tough fibres to soften fully. Covering the pan traps steam so the cabbage cooks evenly without drying out.

Swap the cabbage

How well each one fits the dish's main ingredients (butter, vinegar):

  1. Mustardfits better
  2. Shallotfits better
  3. Onionfits better
  4. Cabbagethe original

Fit is the average pairing score against butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
