Macaroni Milanese

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Cook the macaroni

  1. Boil a large pot of water and add the macaroni and salt.

  2. Cook for 25 minutes until tender, then drain in a colander.

Layer and bake

  1. Layer the macaroni and grated cheese in a deep baking dish.

  2. Sprinkle cayenne pepper over the layers.

  3. Top with slices of butter.

  4. Pour enough milk over the dish to cover it.

  5. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes.

  6. Serve immediately to prevent drying out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the bulk of the dish and absorbs the milk as it bakes, giving body.
Grated cheese
Melts into the macaroni and milk, adding richness and a savoury, binding texture.
Unskimmed milk
Provides moisture that softens the pasta and forms a creamy sauce as it bakes.
Fresh butter
Adds fat and richness, carrying flavour and helping the top brown lightly.

The step that matters

Serve immediately after baking. Baked pasta keeps absorbing liquid and its starch sets as it cools, so it dries out and loses its creamy texture if left to rest too long.
