Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Mushroom Sauce

Ingredients

Directions

Prepare the mushrooms

  1. Remove the stalks from the mushrooms and cut large ones in halves or quarters.

  2. Place the mushrooms in a saucepan with just enough stock or boiling water to cover them.

  3. Season with salt, pepper, and butter, then boil until tender.

Make the sauce

  1. In a separate pan, melt the butter and whisk in the flour to make a roux, cooking until lightly browned.

  2. Stir in a portion of the mushroom cooking liquid until smooth.

  3. Combine with the main sauce.

  4. Add a few drops of lemon juice before serving over beef steaks or fillets.

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main body of the sauce and its earthy flavour once simmered until tender.
Butter
Adds richness and flavour, and forms the fat base of the roux.
Flour
Thickens the sauce when cooked with butter into a roux.
Stock or boiling water
Cooks the mushrooms and its liquid is used to loosen the roux into a smooth sauce.
Lemon juice
Adds acidity that brightens the flavour of the sauce.

The step that matters

Cooking the roux. Flour must cook in melted butter until lightly browned to remove raw starch taste and build flavour; stirring in liquid too early or unevenly can leave lumps.

Swap the lemon

How well each one fits the dish's main ingredients (mushroom, pepper, butter, flour):

  1. Lemonthe original
  2. Plumfits about as well
  3. Limefits less well
  4. Cherryfits less well

Fit is the average pairing score against mushroom, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
