What each ingredient does

Oranges
Provide the juice and the fragrant oils from the grated rind for flavour.
Lemons
Add acidity that brightens the sweetness of the orange juice.
Sugar
Adds sweetness and keeps the frozen ice softer by lowering its freezing point.
