What each ingredient does

Gelatine
Forms the gel network that lets the dessert set firm yet tender.
Cream
Adds richness and a smooth, creamy texture from its fat.
Sugar
Provides sweetness that balances the wine and gelatine.
Wine
Adds flavour to the set dessert.

The step that matters

Heat until it boils, then strain. Gelatine sets by forming a network of protein strands as it cools. Boiling for too long can weaken that network, so the mixture may set softer than expected. Straining removes particles so the set dessert is clear and smooth.
