Tipsy Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Soak sponge cake in Sherry wine until saturated but not falling apart.

  2. Pour boiled custard over the soaked cake.

  3. If using a glass dish, decorate with poached beaten egg whites and dots of jelly.

  4. If using a platter, squeeze sweetened and flavored beaten egg whites through a funnel in fancy shapes over the pudding.

  5. Bake in a 350°F (175°C) oven until the egg whites are a delicate brown.
