Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid cream into a soft, sliceable custard-like texture when chilled.
Cream
Provides fat and richness, giving the set dessert a smooth, velvety mouthfeel.
Wine
Adds acidity and flavor that balances the richness of the cream.

The step that matters

Do not let the cream and wine boil. Gelatin needs gentle heat to dissolve and set well, and boiling the cream can scorch it and cause it to separate or lose its smooth texture.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
