Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Cream the butter in a large bowl.

  2. Add the egg whites and mix well.

  3. Gradually add the flour and beat until combined.

  4. Powder and sift the sugar, adding half to the mixture and reserving the other half.

  5. Mix in nutmeg to your taste.

Bake and cool

  1. Scoop the dough onto baking sheets.

  2. Bake at 350°F (175°C) until lightly golden.

  3. Let cool on the baking sheets before removing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat for richness and a tender, crumbly texture.
Egg whites
Add moisture and help bind the dough together.
All-purpose flour
Provides the structure that holds the cookies together.
Granulated sugar
Adds sweetness and helps the cookies brown lightly in the oven.

The step that matters

Stop beating once the flour is combined. Once flour is hydrated, extra beating develops gluten, which makes cookies tougher and less tender. Mixing only until combined keeps the texture soft.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, egg, flour, sugar):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against butter, egg, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
