What each ingredient does

Milk
Its proteins curdle with the acid and clarify the punch as it strains.
Lemons
Their juice and rinds add acidity and aroma that balance the sugar and spirit.
Loaf sugar
Adds sweetness that balances the acidity of the lemons and the strength of the spirit.
Rum or brandy
Provides the alcohol base and extracts flavour from the lemon rinds during steeping.

The step that matters

Adding the boiling milk. Hot milk curdles on contact with acid from the lemons, and the curds trap cloudiness and impurities. Straining through flannel removes them, which is why the punch comes out clear.
