Raised Waffles

Ingredients

Directions

Make the batter

  1. In a large bowl, combine salt, butter, yeast, and warm milk in the center of the flour.

  2. Mix to form a batter and let it rise overnight.

  3. In the morning, beat the eggs and mix them into the batter.

Finish and cook

  1. Dissolve baking soda in a small amount of warm water and stir it into the batter just before cooking.

  2. Preheat the waffle irons, grease them well, and fill them nearly three-quarters full.

  3. Cook until browned evenly on both sides, being careful not to scorch.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the waffle together once baked.
Yeast
Ferments the batter over the overnight rise, creating air and a light, slightly tangy flavor.
Eggs
Add structure and richness, helping the waffles set and hold their shape.
Baking soda
Reacts with the batter's acidity to add extra lift and help browning.
Butter
Adds fat for tenderness and a richer flavor.
Milk
Hydrates the flour and yeast to form the batter and adds moisture.

The step that matters

Cook until browned evenly, not scorched. Waffle irons vary in heat, and sugars and proteins in the batter brown quickly. Cooking too hot or too long darkens the outside before the inside sets, so checking the color on both sides prevents burning.
