Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh fish
Provides the main body and flavor of the croquettes.
Mashed potato
Adds moisture and softness, helping the mixture bind and stay tender.
Beaten egg
Binds the mixture together and sets during cooking to hold the shape.
Corn starch
Absorbs moisture and helps the mixture hold together when formed into rolls.
Melted butter
Adds richness and helps the croquettes brown in the pan.

The step that matters

Shaping and coating the rolls. The mixture must be well combined and firm enough to hold its shape. A loose mixture can fall apart when coated or fried, so the egg and bread crumb coat should be applied evenly and the rolls handled gently.

Swap the parsley

How well each one fits the dish's main ingredients (fish, potato, butter, egg, corn, bread):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Capersfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against fish, potato, butter, egg, corn, bread. Candidates are from the same food group and used in at least 100 recipes.
