Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Slice the cold roast beef or steak thinly and layer it in a pie dish.

  2. Sprinkle a little flour, pepper, and coarse sea salt over the beef.

  3. Add a layer of chopped tomato or finely chopped onion if available.

  4. Repeat layering with beef and seasoning until the dish is full.

  5. Pour in beef gravy or a little beef drippings and enough water to create gravy.

Make the potato crust

  1. Boil the potatoes until tender.

  2. Mash the boiled potatoes.

  3. Mix the mashed potatoes with milk or cream, butter, and salt.

  4. Spread the potato mixture over the beef as a crust, about 1 inch thick.

Bake

  1. Brush the top with beaten egg.

  2. Bake at 400°F (200°C) for about 20 minutes.

What each ingredient does

Beef
Provides the main savory meat filling that the gravy and seasoning flavor.
Potatoes
Form a soft, mashed topping that bakes into a crust over the filling.
Milk or cream
Adds moisture and richness to the mashed potato topping, keeping it smooth and tender.
Butter
Adds fat and richness to the mashed potato topping for flavor and softness.
Egg
Brushed on top, it promotes browning and a glossy finish on the crust.
Beef gravy
Supplies liquid and savory flavor that moistens the beef layers during baking.

The step that matters

Spread the potato crust evenly over the filling. Mashed potato is thick and can trap air or leave gaps; an even layer seals the filling so moisture stays in while the top browns evenly.

Swap the tomato

The recipe marks tomato as optional. How well each one fits the dish's main ingredients (beef, flour, pepper, onion, potato, milk, butter):

  1. Chivefits better
  2. Leekfits about as well
  3. Capsicumfits about as well
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, onion, potato, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
