Why it works: Chicken and rice are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,769 recipes. Both carry (e,e)-2,4-decadienal, which smells fatty, deep fried. The science ↓

Ingredients
Directions
Make the broth
Boil 2 or 3 whole chickens in water and set the broth aside to cool.
Skim off the fat from the cooled broth.
Simmer the soup
Pour the broth into a soup kettle and add 1 whole onion and ½ cup of rice.
Boil for 2 hours.
Before serving, remove the onion and add pieces of cold cooked chicken.
