Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that absorbs stock and swells, giving the risotto its creamy, tender body.
Beef stock
Liquid that cooks the rice and supplies savory, meaty flavor throughout the dish.
Grated cheese
Melts into the hot rice, adding fat, saltiness and a rich, creamy texture.
Butter
Fat that softens the onion and adds richness and aroma to the base.
Onion
Aromatic base that, when cooked gently, adds sweetness and depth of flavor.

The step that matters

Blanching and rinsing the rice. Blanching in boiling water and then rinsing removes surface starch so the grains stay separate and the texture stays controlled rather than gluey.
