Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Mix the flour and butter together, grating nutmeg into the flour.

  3. In a separate bowl, beat the egg whites until stiff.

  4. In another bowl, beat the egg yolks with the sugar until well combined.

  5. Add the egg whites and the flour mixture alternately to the yolk mixture, mixing well after each addition.

  6. Beat the batter vigorously until smooth.
