Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dough and add richness and structure as they set in the frying fat.
Butter
Adds fat for tenderness and flavour in the dough.
Sugar
Adds sweetness and helps the surface brown during frying.
Flour
Builds the structure that lets the dough be rolled and hold its cut shape.

The step that matters

Fry in hot lard until golden brown. If the lard is not hot enough, the dough absorbs fat and turns greasy and heavy instead of crisping. Frying at a steady high heat sets the outside quickly and browns it evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, butter, flour):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against egg, sugar, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
