What each ingredient does

Gooseberries
Provide the fruit base, flavor, and natural pectin that helps the jam set.
White sugar
Adds sweetness, binds water, and helps the jam thicken and keep well.

The step that matters

Stir constantly during the boil. Sugar and fruit sit on the bottom of the kettle and scorch easily. As water evaporates the mixture thickens, so it can burn before it reaches a set.
