What each ingredient does

Currant juice
Provides the tart, fruity acidity that defines the shrub's flavor.
Loaf sugar
Sweetens the tart juice and helps balance its acidity while also preserving the mixture.

The step that matters

Boil for five minutes while stirring constantly. Constant stirring keeps the sugar dissolving evenly and prevents it from scorching on the bottom of the pot, which would give the shrub a burnt, bitter taste. Boiling briefly dissolves the sugar fully into the juice.
