Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked chicken
Forms the bulk of the filling and provides the main flavour and body.
Cream sauce
Binds the chopped chicken together and keeps the filling moist.
Egg
Coats the croquettes so the breadcrumbs stick and form a crisp shell.
Breadcrumbs
Form a crunchy outer crust that browns when fried.

The step that matters

Cool the mixture before shaping. A warm, soft filling is too loose to hold its shape and may burst or slump in the hot oil. Chilling firms the cream sauce so the croquettes keep their form and fry evenly.

Swap the white pepper

How well each one fits the dish's main ingredients (chicken, celery, pepper, onion, parsley, cream, sauce):

  1. Tarragonfits better
  2. Garlicfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against chicken, celery, pepper, onion, parsley, cream, sauce. Candidates are from the same food group and used in at least 100 recipes.
