What each ingredient does

Sugar
Dissolves into the water and cooks into a syrup that sweetens and sets the filling.
Egg white
Whipped to a stiff foam, it gives the filling its light, airy structure.
Figs
Chopped figs add fruity sweetness and soft texture to the filling.

The step that matters

Adding the hot syrup to the egg white. Hot sugar syrup poured slowly into whipped egg white cooks the white gently and stabilises the foam. Pouring too fast or stopping the stirring can deflate the foam or leave it lumpy.
