Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into the sauce to provide the rich, creamy body and flavor.
Egg
Thickens the sauce as it cooks and helps bind it into a smooth consistency.
Milk or beer
Forms the liquid base that the melted cheese is blended into.
Dry mustard
Adds sharp, tangy flavor that balances the richness of the cheese.

The step that matters

Pour the mixture into the melted cheese and cook until smooth. Egg proteins set with heat, so if the sauce gets too hot or cooks too fast it can curdle. Cooking gently while stirring keeps it smooth.
