Perfection Cake

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Sift together the flour and baking powder.

  2. Cream the butter and powdered sugar until light and fluffy.

  3. Beat the egg whites until stiff and the yolks until thick.

Mix and bake

  1. Add the yolks to the butter and sugar mixture, then mix in the flour.

  2. Gently fold in the beaten egg whites until well combined.

  3. Pour the batter into ordinary cake tins.

  4. Bake in a slow oven at 300°F (150°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift, while yolks add richness and structure to the crumb.
Butter
Creaming with sugar traps air and adds fat for a tender, rich texture.
All-purpose flour
Provides the starch and gluten that give the cake its set structure.
Powdered sugar
Sweetens the batter and helps create a fine, light texture when creamed with butter.
Baking powder
Releases gas in the oven, helping the cake rise and become light.

The step that matters

Folding in the beaten egg whites. Stirring instead of folding knocks out the air trapped in the whites, so the cake rises less and turns dense. Fold gently until just combined.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, butter, milk, egg):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against flour, sugar, butter, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
