To Bake Fish

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Do not cut off the head and tail of the fish.

  2. Stuff the fish and sew it closed or tie it with cord.

  3. Lay the pork strips across the top of the fish.

Season and bake

  1. Sprinkle with water, pepper, salt, and bread crumbs.

  2. Add some hot water to the baking pan.

  3. Bake in a hot oven at 400°F (200°C), basting often.

  4. Bake until the top is nicely browned.

What each ingredient does

Pork strips
Lay over the fish to add fat and savory flavor as they cook.
Bread crumbs
Form a crust on top that browns during baking.
Stuffing
Fills the cavity, adding flavor and moisture to the fish from inside.

The step that matters

Basting often in the hot oven. Regular basting keeps the surface moist and carries fat and juices over the fish, so the top browns evenly without drying out before the flesh is cooked through.
