What each ingredient does

Gooseberries
Provide the fruit body, plus natural pectin and acid that help the jam set.
Lump sugar
Sweetens the fruit, draws out water, and helps the jam thicken and keep.

The step that matters

Boil until the jam sets. Boiling concentrates the fruit and sugar and activates the pectin. Stopping too early leaves the jam runny, while boiling too long can darken it and dull the fresh flavour.
