Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Rub the beef slice with salt and pepper.

  2. In a bowl, mix the crumbled bread, fat salt pork or butter, sage, and additional salt and pepper.

  3. Roll the filling inside the beef slice and sew the edges together.

Bake and serve

  1. Bake in a 400°F (200°C) oven, basting often.

  2. Make a dressing with the drippings thickened with flour and season to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef round
Forms the outer wrapper that holds the filling and cooks into the main meat portion.
Stale bread
Absorbs fat and juices from the filling, giving it a soft, moist body.
Fat salt pork or butter
Adds fat that keeps the filling moist and carries flavour through baking.
Flour
Thickens the pan drippings into a smooth, cohesive dressing.
Dried sage
Contributes a savoury, herbal aroma to the filling.

The step that matters

Basting often during baking. Regular basting spoons hot fat over the surface, helping it brown and keeping the meat from drying out before the filling is fully cooked through.

Swap the sage
