What each ingredient does

Beef
Provides the meaty bulk and body of the mincemeat filling.
Suet
Adds fat that keeps the filling moist and rich in texture.
Brown sugar
Adds sweetness and helps preserve the mixture as it stores.
Raisins
Add concentrated sweetness and chewy texture to the filling.
Tart apples
Add acidity and moisture that balance the sweet, rich filling.
Brandy
Adds alcohol that helps preserve the mincemeat and gives aroma.

The step that matters

Store the mincemeat in a cool place. The mixture is raw meat held with sugar, alcohol and fruit; keeping it cool slows spoilage and lets the flavours blend before baking.
