What each ingredient does

Sliced cabbage
Forms the bulk of the pickle and absorbs the brine and spiced vinegar flavours.
Coarse sea salt
Draws water out of the cabbage and seasons it during the overnight brine.
Vinegar
Provides the acidity that gives the pickle its sharp, preserved character.
Sugar
Balances the sharpness of the vinegar with sweetness.
Garlic
Adds pungent aroma that mellows and deepens during long cooking.
Horseradish
Contributes sharp pungency that fades somewhat with long cooking.

The step that matters

Drying the cabbage before adding the mixture. Pressing the cabbage removes excess brine so the spiced vinegar mixture is not diluted and the pickle keeps a firmer, more concentrated flavour.

Swap the ginger
