What each ingredient does

Mustard seed
Adds a sharp, pungent bite and characteristic flavor to the pickle.
Vinegar
Provides acidity that preserves the vegetables and gives the pickle its tang.
Turmeric
Contributes a yellow color and an earthy, slightly bitter flavor.
Cabbage
Forms the bulk of the vegetables, adding crisp texture that holds up to pickling.

The step that matters

Boiling each vegetable separately until tender. Vegetables of different densities cook at different rates, so boiling them separately keeps each one tender without turning the softer ones mushy. Straining well also keeps excess water from diluting the vinegar dressing.
