What each ingredient does

Green tomatoes
Form the bulk of the pickle and soften as they cook, taking on the spiced vinegar.
Onions
Add body and sweetness as they soften during salting and boiling.
Coarse sea salt
Draws water out of the tomatoes and onions, firming them and reducing excess moisture.
Brown sugar
Balances the sharp vinegar with sweetness and adds depth of flavour.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp bite.
White mustard seed
Adds a sharp, pungent flavour that carries through the spiced vinegar.

The step that matters

Salting overnight. Salt draws moisture out of the vegetables by osmosis. Skipping or shortening this step leaves the vegetables watery, which dilutes the dressing and softens the texture of the pickle.
